The fine tea series from The Quest for Tea come from the mountainous tea area
with extreme temperature differences between day and night,
and misty weather throughout the day. As the tea plants are grown in soil rich
in organic matters, their tea leaves feature low content of total polyphenol,
but relatively high in contents of amino acid, glucose and pectin,
making it sweeter and mellower. The roasting tea master then carefully roastes
the top quality tea according to the characteristics of the tea.
